Here is a new buns recipe for all the burger lovers, it's made with buttermilk, the buns are extra soft and perfect for any burger's recipe.

BUNS

420 g flour T65 (bread)
20 g fresh yeast
40 g sugar
175 g buttermilk
1 egg + 1 egg yolk
25 g butter
5 g salt
1 egg white
Sesame seeds
Poppy seeds

With the universal blade :
Put the buttermilk and fresh yeast into the metal bowl
Run EXPERT / 1 min / SPEED 5 / 35°C 
Add in this order : the sugar, flour, salt, the egg and egg yolk into the metal bowl
Run EXPERT / 1 min / SPEED 9 / 0°C 
Add the butter
Run EXPERT / 1 min / SPEED9 / 0°C 

With the XXL :
Put the buttermilk and fresh yeast into the metal bowl
Run EXPERT / 1 min / SPEED 5 / 35°C 
Add in this order : the sugar, flour, salt, the egg and egg yolk into the metal bowl
Run EXPERT / 5 min / SPEED 7 / 0°C 
Add the butter
Run EXPERT / 5 min / SPEED 7 / 0°C 

Transfer the dough to a floured salad bowl, cover with a damp cloth or film it
Set aside for 1 hour to rise

Place on a floured work surface and gently punch down to push the air out of the dough
Divide into 6 parts and roll the buns
Place on a lined baking tray and set aside to rise for another 30 minutes.

Preheat the oven to 180°C

Beat the egg white with a tablespoon of water
Brush the buns with it
Sprinkle with sesame seeds or poppy seeds

Bake for 15 min at 180°C
